Why can gelatin be widely used in candy
Gelatin has the function of absorbing water and supporting. After gelatin particles are dissolved in water, they can attract and interweave with each other to form a layered network structure, and agglomerate with the temperature drop, so that sugar and water can be completely filled in the gaps of gel, so that soft candy can maintain a stable shape, even if it bears a large load, it will not be deformed.

明胶在不同糖果的添加量
      明胶在糖果中的一般加量为5%~10%。在晶花软糖中明胶用量6%时效果最好。在橡皮糖中明胶的加量为6.17%。在牛轧糖中为0.16%~3%或更多些。在糖果粘液的浓糖浆中加量为1.15%~9%。糖味锭剂或枣子糖果的配料要求含明胶2%~7%。在糖果生产中,使用明胶较淀粉、琼脂更富有弹性、韧性和透明性,特别是生产弹性充足、形态饱满的软糖、奶糖时,需要凝胶强度大的优质明胶。
